Kveik Yeastery dry brewing yeast K.22 Stalljen 7 g

Kveik is a Norwegian multi-strain yeast, traditionally used in farmhouse brewing and passed down from father to son for generations. It is known for extremely fast fermentation and producing unique flavors and aromas.

The K.22 Stalljen strain comes from Stig Seljeset in Hornindal, Norway. Stalljen ferments at temperatures from 12°C (54°F) to 38°C (100°F). Higher fermentation temperatures result in faster fermentation, with beer potentially fermenting in just 48 hours at the highest temperatures. At lower temperatures, fermentation takes longer. Yeast nutrient is recommended to ensure healthy fermentation.

Flavor and Aroma:

  • Primary notes: tropical fruits, mango, and pineapple

  • Secondary notes: orange and lemon

  • Intensity: medium to high at higher fermentation temperatures; milder at lower temperatures, producing a clean and refreshing beer reminiscent of a lager

Recommended Beer Styles:
K.22 Stalljen is versatile and suitable for many beer styles, including IPA, Pale Ale, stouts, and porters. Perfect for experimenting with new recipes and creative brewing projects.

Dosage and Use:

  • Sprinkle yeast evenly onto wort at temperatures above 18°C

  • Standard dosage: 30 g / hl

  • For fermentation below 18°C or high-gravity wort: increase dosage to 60 g / hl
